What the psychiatrist observes, is not the ‘person’ him/herself, but the ‘psychosis’ exposed to his/her method of questioning.

one in particular? all of them?
or the institution of psychiatry?
psychiatry is indeed a “form of questioning” through which we can observe nature.
observing through that lens reveals more about the nature of lens than it does about the nature being observed through it..
